Turning cheat foods good - cauli pizza

I am going to start a recipe series "Turning Cheat Food Good"! Who doesn't like pizzas? Yes I secretly do too but they are certainly not in my diet. Yet I can't eat chicken and salad ALL the time. So this time I experimented with cauliflower crust and it worked out like a treat! Steam 2 heads of cauliflower, drain and squeeze well, process into fine crumbly texture, season with a little salt and pepper, dried oregano and rosemary herb, stir in 2 eggs and roll the "dough" out onto a flat surface. Now the fun part: spread home-made tomato purée, paprika, spices and add your toppings: shredded cooked chicken, cherry tomatoes, basil, eggplant and a sprinkle of cottage cheese if you like. Bake in the oven for 45 minutes at 180c. Voila - Bellissimo! Guilt-free, gluten-free, wheat-free "pizzas"! *C*
